π₯ Cajun Rice Jambalaya Recipe
Ingredients:
- 1 lb chicken breast, diced
- 1 lb smoked sausage, sliced
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 1 1/2 cups long-grain rice
- 2 tbsp Cajun seasoning
- 1 tsp thyme
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add chicken and sausage, cooking until browned. Remove and set aside.
- In the same pot, sautΓ© onion, bell pepper, celery, and garlic until softened.
- Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, paprika, salt, and pepper.
- Return the chicken and sausage to the pot. Bring the mixture to a boil.
